Pero Puffs
  • Ingredients for the pastry (approximately 40 mini cream puffs):
  • 1 cup milk
  • 1 pinch salt
  • 1/2 cup flour
  • 3 eggs
  • 1 tablespoon sugar
  • 1/3 cup butter
  • Butter for the plate
  • Ingredients for the cream (prepare the cream as in “Caro Mousse recipe ”):
  • 2-3 teaspoons Pero all natural beverage
  • 3 fresh eggs
  • 1/2 cup sweet cream
  • 1/2 cup plain couverture chocolate
  • 1/4 cup sugar

Preparation: Boil milk with salt, mix with flour, and form a ball. Fold 1 egg into ball and cool down. Add a mixture of butter and sugar and stir in the rest of the eggs. Mix all ingredients together. Create puffs out of mixture with an icing bag and form on a buttered baking dish. Place dish in the middle of a 395 degree Fahrenheit oven and bake until golden brown. 

Makes 40 pieces.
